Instructions

As you preheat your oven to 355°F, wash and cut the mixed peppers in half vertically. Remove the seeds and pilling, brush the olive oil on the outside of the peppers, then set in the pan with the brushed side down. Place in the oven for 15-20 minutes once at temp.

Cook the ground turkey on medium heat in one pan, adding the steak seasoning while cooking to distribute evenly. As the turkey is cooking, remove the tails of the shrimp and fry in the second pan. Stir/flip each occasionally for 5-7 minutes, or until done.

While the meats are cooking, mix the almond butter, egg, light sour cream, thyme, garlic powder, and onion powder in a large bowl. Once fully cooked, stir in the turkey and shrimp and mix thoroughly.

Remove the peppers from the oven once cooked and evenly distribute the prepared stuffing mixture evenly into the peppers. If you want a little extra kick, sprinkle the crushed chili peppers over the peppers, then top with the mozzarella cheese.

Cook the peppers for an additional 15 minutes then serve.

Recommended side dish:

  • 100 grams each: Spinach sautéed in 1 tablespoon extra virgin olive oil
  • 100 grams each: Steamed sweet corn

  • 150 grams 93/7 Ground Turkey
  • 150 grams Jumbo Cooked Shrimp
  • 2 tablespoon Almond Butter
  • 1 Large Egg
  • 75 grams Light Sour Cream
  • 2 Mixed Peppers
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon ALDI-brand Steak Seasoning (good on everything, don’t sleep on this one!)
  • 1 teaspoon Thyme
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1-2 teaspoon Ground Chili Pepper (depending on preference)
  • 30 grams Shredded Mozzarella Cheese
