  • Cook Time: 10-15 minutes
  • Makes 3 servings
  • Required Dishes: Cutting board, large saucepan with cover

Instructions

We’ll start this dish by washing the sweet potatoes and apples. Peel the sweet potatoes, then dice both the sweet potatoes and apples into small cubes. You can peel the apples as well, however I prefer to leave the peel.

Coat the large saucepan with the olive oil/coconut oil, then put both the sweet potato and apple into the saucepan. Add the crushed red pepper and ground cinnamon, stirring to make sure the sweet potato is coated.

Cover and cook over medium heat, stirring occasionally for 10-12 minutes or until the sweet potato pieces are soft.

That’s it! This Spicy Apple and Sweet Potato recipe goes really well in a bowl with eggs, in a burrito, or as a side with or without ketchup.
